My husband's Williamsburg sweet potatoes are always a hit. He just bakes the sweet potatoes (usually about one per person), then takes them out of the skins and mashes them up. He mixes in butter (about half a stick for 10 potatoes), brown sugar (about 1/8 cup) and cinnamon, fresh ground nutmeg and ginger to taste.

They are SO easy and yummy! :)
